1. Look at the variety
There are generally three types of ham in the market. The south leg is Jinhua ham, the north leg is Subei ham, and the cloud leg is Rongfeng ham. Among them, Jinhua ham is the most famous and the most expensive.
2. Look at the appearance
High-quality ham casings are close to the meat, the intestines are dry and elastic; the inferior ham casings are wet and sticky, and the intestines are not elastic.
3. Smell the smell
Fresh and high-quality ham has the inherent aroma of sausage; inferior ham may have a sour, oily taste or other peculiar smell. When checking, it is best to use a bamboo stick to pierce the ham into the meat. After pulling it out, smell the bamboo stick for any peculiar smell. It is best to use a few more bamboo sticks to check the various parts of the ham.
4. Look at the slice
Good ham has tight and elastic meat. After cutting, the cut surface is dark red with bright and uniform color. Inferior ham has soft meat, gray, brown or black cut surface, and uneven color.
